Banh-Mi Style Turkey Tacos

  • In a small saucepan over medium heat, combine sugar, vinegar, and fish sauce. Stir until sugar is dissolved. Simmer, without stirring, 3 minutes. Remove from heat; let cool.
  • In a medium bowl, toss cooled vinegar mixture with jalapenos, radish, cucumber, and carrots; set aside.
  • Spread mayonnaise on tortilla. Add turkey. Top with vegetable mixture. Serve with lime wedges, if desired.

1  T Rice Vinegar
1/2  t Fish sauce
1  T Jalapeno pepper, thinly sliced
1  T Radish, thinly sliced
1  T Cucumber, thinly sliced
1  T Shredded carrots
1  T Fat-free mayonnaise
1  6 inch Flour taco tortilla
2  oz. Shredded Jennie-O New World L'Attitudes (214902), heated to 140 F.
