Sausage & Asparagus Mimosa Platter

Directions

  • Coat nonstick skillet with nonstick spray.
  • Position links in a single layer about 1" apart in skillet. Cook on medium heat, turning often for 9 minutes from thawed, 10 minutes from frozen AND until internal temperature reaches 165°F as measured by a meat thermometer. Set aside and keep warm.
  • Whisk together vinegar, mustard, salt, and pepper. Slowly whisk in olive oil. Push egg through a fine sieve.
  • Place asparagus and sausage links on a platter and top with vinaigrette and grated egg.

1  Tbsp. White wine vinegar
2  tsp. Dijon mustard
1/2  tsp. Coarse salt
1/4  tsp. Freshly ground pepper
3  Tbsp. Extra virgin olive oil
1  large Hard cooked egg
2  lbs. Steamed Asparagus
