Big Texas Breakfast Sandwich

  • Texas Mayonnaise: Mix all ingredients together, keep refrigerated until ready to use.
  • Sandwich & Relish: In sauté pan over medium-high heat, add ingredients in the following order: bacon, onions and peppers, garlic, mushrooms, tomatoes, cilantro. Sauté until onions and peppers are transparent and bacon is slightly crisp.
  • Preheat conventional oven to 350°F. Place ham steaks in shallow hotel pan with water covering the bottom of the pan. Tent with foil. Cook until internal temperature reaches 140°F.
  • Place ham steaks on biscuits, topped with cheddar cheese, Texas relish, and Texas mayo.


  Texas Mayonnaise:
1  tsp. paprika
1  tsp. chili powder
1  tsp. cayenne
1  tsp. garlic salt
1/2  tsp. cumin
1/2  tsp. oregano
1/2  tsp. thyme
1 1/2  c. mayonnaise
  Sandwich & Relish
5  slices bacon cooked, diced
2  cups tomatoes, diced
2  cups mushrooms, sliced
4  cups white onions, diced
3  cups green peppers, diced
3  Tbsp. garlic minced
  Cilantro as needed
6  each JENNIE-O® All Natural Reduced Sodium Ham Steaks, #230224
6  slices smoked cheddar cheese
6  sliced biscuits, buttered and toasted
